Austin-Style Breakfast Taco Recipe with Bacon, Egg, & Avocado

There are some foods that work so well together, they are impossible not to love. Tomatoes and mozzarella. Peanut butter and gelatin. Strawberries and cream. And in my kitchen, the holy trinity of breakfast: bacon, eggs and avocado. They are like that perfect couple where both people are individually great, but magic when they join.

These breakfast tacos are simple, but the combination of creamy avocado, scrambled eggs, salty bacon and a smoked roasted tomato sauce wrapped in a warm corn tortilla. Completely delicious. It is a breakfast that hits all correct notes: nutritious, satisfactory and (let’s be honest) really crazy.

How to make a great breakfast taco

Some tips that make all the difference:

  • Use corn tortillas for that authentic environment (and additional fiber). I like to heat them in a dry pan or on an open flame until they are soft and slightly carbonized to obtain an additional flavor.
  • Go with a roasted sauce. Add a smoked depth and gather everything.
  • Capa strategically: Start with the avocado as its creamy base, then eggs, bacon, salsa and a flowering or a coriander to finish.
  • Friendly meal preparation: You can cook the bacon and make your sauce in advance, simply stir the fresh eggs to get the best texture.

The breakfast that wins the day

From Monday to Friday, I will make a quick version with precooked bacon and sauce bought in the store. On the weekends, I go to everything with homemade roast tomato sauce and take care of coffee with our family. Anyway, these tacos (or a similar variation with more sauteed spinach and zucchini!) They are my breakfast to go when I want something that feels intentional and energizing.

Description

This Austin inspired breakfast taco is full of protein, healthy fats and fiber for a balanced beginning of its day.


  • 4 corn tortillas

  • 4 big eggs

  • Kosher Salt and newly ground black pepper
  • 4 crispy bacon slices, chopped

  • 1 mature avocado, crushed

  • 2 tablespoons of finely chopped raw onion

  • Handful of fresh coriander leaves

  • 1/4 cup of smoked tomato sauce (bought in the store or homemade)


  1. In a small bowl, break the eggs and gown with a tablespoon of water (or milk if you wish), pinch of kosher salt and newly terrestrial black pepper. Heat a pan over medium-low heat with enough butter or oil to slightly cover the bottom of the pan.
  2. Add the eggs to the pan and cook, stirring with a spatula, until it squeezes to your liking. Remove from heat.
  3. Heat the corn tortillas in a dry pan or directly on a gas flame until they are soft and slightly hunted.
  4. To assemble, the avocado broke on each tortilla.
  5. Cover with scrambled eggs, chopped bacon, raw onion, coriander and a generous tomato sauce with tablespoon or smoked. Serve warm and enjoy!
